Kasumi
KASUMI knives are hand crafted in Seki City, Japan, by the Sumikama family, a 27th generation family of knife makers. Sumikama is devoted to manufacturing high-quality and value-added cutlery using the over 780-year tradition of swordsmiths. KASUMI, named after the “white mist” visible in the Seki mountains, features a unique and traditional Japanese design with a special construction technique that is a closely guarded secret. KASUMI's Damascus knives are made from 32 layers of stainless steel folded around a middle layer which acts as the cutting edge to provide ultimate durability. The middle cutting layer is made of VG-10 stainless steel, a material developed and highly regarded for producing sharp and strong knives. The edge of KASUMI knives features a Western-style bevel with a 15° angle that is sharper and lasts longer than European-style knives. The beautiful resin handle is made from multiple layers of wood and riveted with stainless steel rivets to the full handle tang. KASUMI knives are tempered and hardened to Rockwell C59 - 60 to deliver the sharpest kitchen knife out of the box.
