A santoku knife is often called an Asian chef's knife. They have a straighter edge than a chef's knife, and a more rounded spine, particularly near the point. They are also generally lighter and thinner, allowing them to more easily chop vegetables. The Hollow Edge has a number of hollow ovals ground into one or both sides of the blade. This helps to prevent food from sticking to the blade and helps the knife cut more efficiently.
The full edge enables cutting along the whole length of the blade. This edge combines Japanese and European cutting culture.
